Beignets

4 tablespoons butter
salt and pepper
1/2 cup plus 1 tablespoon all-purpose flour
2 eggs
10 ounces salmon fillet, skinned and cut into small strips
vegetable oil for deep frying

Put the butter in a pan with 2/3 cup water. Season. When the butter has melted, bring to a boil. Remove from the heat and immediately add the flour. Beat together, then return the pan to low heat and continue beating until the dough comes away from the sides of the pan. Cool. Beat the eggs, then gradually beat them in. Stir in the strips of salmon.

Heat the oil until a little of the pastry dropped into it sizzles immediately. Then drop in tablespoonfuls of the beignets. Fry a few at a time, turning frequently, for about 10 minutes or until they are golden. Drain on paper towels. Serve immediately.
