7 tablespoons mayonnaise
2 teaspoons mango chutney
6 slices bread, toasted
4-6 small, lettuce leaves
1 tomato, peeled and sliced
2 slices crisp bacon, crumbled
4 ounces salmon, poached, skinned, boned and flaked
1/2 avocado, sliced
Mix 2 tablespoons of the mayonnaise
with the chutney and spread on 2 pieces of toast.
Add a few lettuce leaves, cover with the tomato slices
and sprinkle with bacon. Spread 2 more pieces of toast
with mayonnaise, cover with salmon and then avocado.
Place, salmon side up, on the prepared pieces. Spread
the final pieces of toast with mayonnaise and put
them on top. Secure with toothpicks. Cut into triangles.
