Fisherman's
Pie
1 1/2 pounds potatoes, peeled and diced
2 tablespoons butter
2-3 tablespoons milk
salt and pepper
2 tablespoons vegetable oil
1 large onion, chopped
2 1/2 cups thickly sliced mushrooms
1 x 10-ounce can condensed celery soup
2 x 6 1/8-ounce cans salmon, drained, boned and flaked
Preheat the oven to 375°F. Cook the potatoes,
then mash them with the butter and milk and season
well. Heat the oil and cook the onion and mushrooms
until just soft. Stir in the soup, salmon, 1/4 cup
water and season to taste. Spoon into a baking dish
and cover with the mashed potatoes. Bake for 35 minutes.
