Smoked Salmon Salads
2 hard-boiled eggs, chopped
2 tablespoons mayonnaise
8 Ounces smoked salmon, sliced
16 spears asparagus, cooked
4 slices buttered whole-wheat bread
Mix the eggs with the mayonnaise.
Season. Divide the mixture between 4 plates, spooning
into mounds on one side of each plate. Divide the
salmon between each plate. Arrange 4 asparagus spears
beside the salmon. Add slices of bread cut into
4 triangles. Garnish with lemon wedges. SERVES 4
