Kebobs
2 1/2 pounds salmon steaks
3 Large cucumbers
1/2 cup Dry white wine
3 tablespoons soy sauce
1 teaspoon sugar
2 tablespoons melted butter
Cut salmon into 11/2-inch chunks;
remove bones. Peel and cut cucum- i bers in half;
remove seeds and cut cucumbers into 1-inch chunks.
Combine wine, soy sauce, sugar, and butter; pour
over salmon and cucumber chunks. Mix and allow to
marinate in refrigerator for at least 1 hour. Place
on skewers alternately with salmon and cucumber
until skewers are filled. Broil about 4 inches above
moderately hot coals. Turn skewers and baste with
marinade until salmon is lightly browned all over.
SERVES 5 to 6.
