Salmon Newburg

11/2 cups cooked salmon
4 tablespoons butter, melted
4 tablespoons flour
2 cups milk
2 slightly beaten egg yolks
1/2 teaspoon salt
1/3 teaspoon pepper
1/4 cup sherry
Tabasco Sauce, dash
Rice, enough to serve 4 to 6

Flake salmon in rather large pieces. Melt butter in a pan and blend in flour; do not brown. Slowly add milk, stirring constantly; cook over medium heat until slightly thickened and smooth; add fish. Remove from heat and slowly add egg yolks. Return to heat and cook 3 minutes longer. Add salt and pepper. Before serving add sherry and tabasco. Serve over rice.

Serves 4 to 6.
