Oven-Baked Salmon with Garlic and Lentils

Lentils
1 tablespoon olive oil
grated zest and juice of 1 orange
salt and pepper
1 cup green lentils
1 small onion stuck with 1 clove
1 bouquet garni

Salmon
2 tablespoons olive oil
2 cloves garlic, chopped
2 tablespoons chopped parsley
grated zest of 1 orange
4 salmon steaks

To make the dressing for the lentils, beat the oil and orange juice together, then stir in the zest, season well and set aside.

Put the lentils, onion and bouquet garni into a pan. Cover with water and bring to a boil, then simmer for 45 minutes or until the lentils are tender. Drain. Discard the onion and bouquet garni. Stir the oil and orange juice mixture into the lentils. Keep warm.

Meanwhile, preheat the oven to 350°F. To prepare the salmon, pour the oil into a baking dish. Stir in the garlic, then cover and put in the oven for 10 minutes or until the oil is sizzling. Sprinkle with the parsley and orange zest. Add the salmon steaks, turning them over to coat with oil. Cover and return to the oven for 8-10 minutes or until the salmon is just cooked and a knife will slide in easily next to the bone.

Transfer the lentils to a serving dish. Top with the salmon steaks and pour the garlic-flavored juices over them.
