Poached Steaks
4 salmon steaks, 6 ounces each
1/2 onion, thinly sliced
1 carrot, sliced
2 cups water
1 celery stalk, chopped
10 peppercorns
1/2 teaspoon thyme
juice of 1 lemon
Salt pinch
Place cleaned salmon steaks in skillet
and add remaining ingredients; liquid should barely
cover fish. Simmer covered for 20 minutes. Using
slotted spatula, transfer salmon to platter and
serve hot.
SERVES 4.
