Smoked
Salmon Canapés
4-5 slices whole-wheat bread
4 ounces smoked salmon, sliced
Parsley butter or tarragon and garlic butter
Place the smoked salmon on whole-wheat
bread spread with a Flavored Butter, then cut the
bread into squares or rectangles. For Christmas
or special occasions, use a cookie cutter to make
stars, and decorate with a little chopped dill sprinkled
over the points.

Flavored Butters
Parsley Butter
4 tablespoons butter, softened
2 tablespoons chopped fresh parsley
1 teaspoon lemon juice
salt and pepper
Mash all the ingredients together.
Season to taste. Shape into 1-inch thick roll, then
wrap in foil and chill. Cut the cold butter into
4 pats and serve on top of hot salmon.
Tarragon and Garlic Butter
4 tablespoons butter, softened
1 tablespoon chopped tarragon
1 clove garlic, crushed
Mash all the ingredients together.
Season to taste. Shape into 1-inch thick roll, then
wrap in foil and chill. Cut the cold butter into
4 pats and serve on top of hot salmon.
Orange and Mustard Butter
2 teaspoons Dijon Mustard
1 teaspoon orange juice
4 tablespoons butter, softened
grated zest of 1/2 orange
Mix the mustard and orange juice together.
Mash in the butter, zest and season to taste. Shape
into 1-inch thick roll, then wrap in foil and chill.
Cut the cold butter into 4 pats and serve on top
of hot salmon.
