Smoked
Salmon Pillows
Taramasalata is a pale pink dip made
from fish roe that was originally from Greece. Look
for it sold in tubs at your supermarket delicatessen
counter, or freshly prepared in gourmet food stores.
4 ounces Taramasalata
1/2 cup cream cheese
4 large thin slices smoked salmon
8 chives
lemon wedges
8 slices pumpernickel bread, buttered
Mix the taramasalata and cream cheese
together. Divide between the smoked salmon slices,
then fold over the edges and shape into round pillows.
Tie 2 chives around each and serve with wedges of
lemon and buttered pumpernickel.
