Smoked
Salmon Pinwheels
These bite-sized snacks are ideal
for passing around at a party.
1 tablespoon chopped dill
1 teaspoon lemon juice
1 tablespoon butter, softened
4-5 thin slices whole-wheat bread
4 ounces smoked salmon, sliced
pepper
In a small bowl, mash the dill and
lemon juice into the butter. Cut the crusts from
the bread, then butter the slices with the flavored
butter. Lay the smoked salmon on the bread, cutting
off any edges and using the pieces to fill in any
gaps. Leave one end of the bread uncovered. Sprinkle
the pepper over. Roll up the bread, starting at
the end opposite the uncovered one. Use a sharp
knife to cut each into 4 or 5 pinwheels.
