Cherry Tomatoes
8 ounces cherry tomatoes
5 ounces salmon, poached, skinned and boned
5 tablespoons mayonnaise
1 tablespoon pesto sauce
Dressed lettuce leaves
Sprig basil, to garnish
Cut the tops off the tomatoes and reserve. Spoon
out the flesh. Flake the salmon. Combine the mayonnaise
and pesto sauce, then fold in the salmon. Season to
taste. Spoon into the tomato shells and use the tomato
tops as lids; there may be some filling left over.
Arrange the tomatoes on a few lightly-dressed lettuce
leaves and garnish with a sprig of basil.
