Tarragon
Salmon
Fresh salmon, 3 pounds
Stock:
2 cups water
1/2 cup tarragon wine vinegar
1 tablespoon minced onion
4 peppercorns
Salt to taste
Pepper to taste
Parsley sprigs garnish
Clean salmon; wrap in cheesecloth
and place on rack in large kettle. Combine next
6 ingredients and pour over fish. Cover and simmer
45 minutes. Lift fish out carefully; remove skin.
Serve either hot or well chilled. Decorate platter
with parsley. Top salmon with spoonfuls of Tarragon
Sauce.
Serves 6.
Tarragon Sauce
1 cup sour cream
2 tablespoons tarragon wine vinegar
Salt to taste
Pepper to taste
1 tablespoon scallions, cut
1/2 teaspoon sugar
Combine all ingredients and mix thoroughly.
Makes 1 cup.
